Sapote

Sweet mamey-colored pulp; tropical table fruit and desserts.

Sapote (Pouteria sapota) produces an oval fruit with rough brown skin and sweet orange butter-like pulp. Grown on the Ecuadorian coast and exported to Latin American and ethnic North American markets. Rich in beta-carotene and fiber. Harvested at firm ripening stage.

4–10 °C, individual protection against bruising. Avoid ethylene exposure and direct light.

Preparation

Ripen at room temperature if needed; wash, split, and extract pulp with sanitized tools. Ideal for IQF or immediate fresh use.
