Parsnip

Sweet white root; traditional European cuisine and gourmet retail.

Ecuadorian parsnips (Pastinaca sativa) are grown in cold highland soils with smooth white roots and sweet nutty flavor. Uniform caliber without excessive branching. Exported in 5–10 kg boxes for Central and Northern European autumn and winter markets.

Wash and sanitize. Peel, cut, or blanch per destination; chill quickly after processing.
