Purple garlic

Aromatic export bulb; retail, industry, and gourmet.

Ecuadorian garlic (Allium sativum) is produced in the highlands with purple-skinned bulbs, firm cloves, and high allicin content. Air-dried and controlled curing before packing. Exported in 5–10 kg mesh or carton boxes for Europe, the Americas, and Asia.

Storage & handling

0–8 °C depending on product, 90–95% RH. Keep away from ethylene-producing fruit.

Preparation

Wash and sanitize. Peel, cut, or blanch per destination; chill quickly after processing.
