Pumpkin / winter squash

Storage and fresh fruit; autumn retail and processing.

Ecuadorian squash (Cucurbita spp.) is grown in highlands and coast with hard-skinned fruit, sweet orange flesh, and calibrated weight. Butternut, kabocha, and decorative varieties by market. Exported in 10–15 kg boxes for European and North American autumn markets.

0–8 °C depending on product, 90–95% RH. Keep away from ethylene-producing fruit.

Wash and sanitize. Peel, cut, or blanch per destination; chill quickly after processing.
