Beech mushroom (shimeji)

Cultivated fine-stem mushroom; crisp texture for Asian and European retail.

Ecuadorian beech mushrooms (Hypsizygus tessellatus) are grown on sterilized substrate under controlled CO₂ and humidity conditions. Compact clusters, firm white stems, and mild nutty flavor. Exported in 150–200 g trays with continuous cold chain for gourmet markets.
