Ecuadorian green plantain is exported for chips, flour, fried plantain, and Latin American diaspora markets. Harvested firm green with excellent mechanical resistance for long transit.
Storage & handling
13–14 °C mandatory (do not chill below 12 °C). 85–90% RH, keep away from ripe climacteric fruit.
Preparation
Select by ripeness stage (green or ripe). Peel and cut on processing line; use antioxidant if pulp is exposed.
